Organic durum wheat semolina:
We have made a choice to support local farmers, sourcing only the best 100% certified organic, first extraction durum wheat semolina grown and milled in italy, so we can guarentee you an authentic, italian, artisan pasta from the field to your table.
Organic chestnut flour:
Chestnuts dried and ground into flour have been one of the most historically important and delicious ingredients in ligurian mountain cooking for centuries as families relied on them as their main sustinance over the winter- with its characteristically morish smoky, sweet taste we have opted to let the real flavor of the chestnuts shine through in our chestnut ‘signorine’, giving us an all-natural, superior pasta free from colorings or flavorings of any kind.
