So you’ve ‘forked’ out (😅sorry, couldn’t help it ) for that artisan pasta and your all geared up for a special meal. Don’t fall on the last hurdle. Follow our simple steps below to cooking that pasta to perfection 👌👌
1️⃣Dig out your biggest pan. We recommend bringing to the boil around 1 litre of water for every 100 g of pasta you want to cook .
Top tip ➡️Use a wide pan that your shape fits into especially for long pasta like spaghetti so you don’t have to break the pasta 😉!
2️⃣ Listen to @ciaosamin and Salt, Salt, Salt that water ‘til it tastes like the sea !
3️⃣ Wait until the water is on a rolling boil before adding the pasta.
4️⃣ Stir IMMEDIATELY with a wooden spoon to avoid the pasta sticking together.
5️⃣ Don’t put the laundry on! The cooking time on the pack should only be seen as a GUIDE. The only way to know if the pasta is done is to keep TASTING it ! Getting distracted or just putting a timer on may mean you miss that magic 🪄moment!
6️⃣When it’s got a chewy ‘al dente’ centre or is to your liking, drain it,keeping back some of the pasta water.
7️⃣Add the pasta to your pan of sauce and stir together on the heat, slackening with a ladle of the pasta water .
8️⃣ Shower with cheese, or not, and serve smugly, on a warm plate to your special someone.

You just need to glance at a pack of our long pasta, with its iconic ‘U’ shape from being hung to dry on canes to understand what artisan pasta making involves. Here the dish is topped with the traditional green beans and potatoes .
Its important to remember that Pesto is more of a method than a recipe. The basic ingredients: Parmesan or Pecorino Sardo or both ? With or without garlic, How much of each ingredient and in which order they are added, is much disputed and varies from cook to cook . 🇬🇧(italiano sotto) In Liguria when we think of what to eat with pesto only a few types of pasta come to mind. A big favorite is Trenette pasta.But isn’t that just the same as Linguine ? Well actually no. Trenette pasta, traditional to the Ligurian riviera is a harder to find, ‘U’ shaped, bronze-extruded pasta. Hung to dry on canes, the shape resembles more a flattened spaghetti as it’s thicker in the middle and thinner towards the edges. Linguine on the other hand is a flat pasta cut similar to a narrow Fettuccine. Delicious with fish dishes too, Trenette are one of the most popular types of pasta in the region and worth looking out for next time pesto’s on the menu. 🇮🇹Quando si parla di pasta al pesto in Liguria, si pensa soltanto a pochi formati, quelli dalla tradizione. Le Trenette sicuramente sono tra i tipi di pasta più amati della riviera. Spesso confuse con le Linguine sono in effetti molto diverse, con un taglio trasversale ovale e bordi affusolati rispetto alle Linguine che invece rimangono di spessore uniforme. Le nostre Trenette infatti sono inconfondibili: trafilate al bronzo e appese sulle canne.
